Crispy Coating Mix & Scotch Egg
Ingredients:
- 4 cups dry breadcrumbs (400g)
- 1/3 cup vegetable oil (80ml)
- 1 tablespoon salt
- 1 tablespoon paprika
- 1 tablespoon celery salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic salt
- 1/2 teaspoon minced garlic
- 1/4 teaspoon minced onion
- 1 pinch dried basil leaves
- 1 pinch dried parsley
- 1 pinch dried oregano
- 12 hard-boiled eggs, peeled
- 2 packs (375g each) breakfast sausage
Directions:
1. Prep the Crispy Coating Mix:
- In a large bowl, combine the breadcrumbs, salt, paprika, celery salt, black pepper, garlic salt, minced garlic, minced onion, dried basil, dried parsley, and dried oregano. Once the dry ingredients are whisked together, add in the vegetable oil and whisk until combined. This creates a flavourful breading mixture that is perfect for Scotch Eggs but also chicken breasts or pork chops!
2. Prepare the Sausage:
- Remove the breakfast sausage from its casings and mix it into one large, cohesive mass. Divide the sausage mixture into 12 equal portions.
3. Wrap the Eggs:
- Take each hard-boiled egg and mold one portion of the sausage evenly around it, ensuring the entire egg is fully covered with a thick layer of sausage. Press the sausage tightly to avoid any gaps.
4. Coat in Breadcrumbs:
- Lay parchment paper on your countertop and spread some of the breadcrumb mixture onto the paper. Roll each sausage-covered egg in the breadcrumb mixture, pressing gently to ensure an even coating.
5. Bake to Perfection:
- Place the coated eggs onto a baking sheet fitted with a wire rack (this will help drain the fat while cooking). Make sure to space them evenly on the rack. Preheat your oven to 375°F (190°C). Bake the Scotch Eggs for 25-30 minutes, or until the sausage is fully cooked and the coating is crispy and golden brown. The internal temperature of the sausage should reach 160°F (71°C).
6. Serve and enjoy!
