    Funfetti Muffins


    Ingredients:

    • 2/3 cup (150ml) Vegetable Oil ( or other light tasting oil)
    • 2/3 cup (150ml) Honey
    • 2 Eggs, beaten
    • 1/3 cup (70ml) Milk or Non-Dairy Milk Substitute
    • 1 tsp Vanilla Extract
    • 2 cups (400g) Sprouted Whole Wheat Flour
    • 1 tbsp Baking Powder
    • 1/4 tsp Salt
    • 2 Medium Bananas, mashed
    • Sprinkles


    Directions:

    1. Preheat the oven to 325°F (180°C). Line or grease a mini muffin pan.
    2. In a large bowl, mix the oil and honey until well combined. Add the eggs, milk, and vanilla and mix again.
    3. In a separate bowl, whisk flour, baking powder, and salt.
    4. Add dry ingredients into the wet mixture, and using a spatula or wooden spoon, mix just until combined. Next, gently fold in the bananas (don't overmix), then divide the batter evenly between the muffin cups.
    5. Top with sprinkles and bake for 12-15 minutes, or until a toothpick inserted into a muffin comes out clean.
    6. Remove from the oven and cool in the pan for 10 minutes. Then move to a wire rack to cool completely. Store in the refrigerator in an airtight container lined with a paper towel for 3-4 days. Or, freeze in a freezer-safe bag for up to 3 months!
