Funfetti Muffins
Ingredients:
- 2/3 cup (150ml) Vegetable Oil ( or other light tasting oil)
- 2/3 cup (150ml) Honey
- 2 Eggs, beaten
- 1/3 cup (70ml) Milk or Non-Dairy Milk Substitute
- 1 tsp Vanilla Extract
- 2 cups (400g) Sprouted Whole Wheat Flour
- 1 tbsp Baking Powder
- 1/4 tsp Salt
- 2 Medium Bananas, mashed
- Sprinkles
Directions:
- Preheat the oven to 325°F (180°C). Line or grease a mini muffin pan.
- In a large bowl, mix the oil and honey until well combined. Add the eggs, milk, and vanilla and mix again.
- In a separate bowl, whisk flour, baking powder, and salt.
- Add dry ingredients into the wet mixture, and using a spatula or wooden spoon, mix just until combined. Next, gently fold in the bananas (don't overmix), then divide the batter evenly between the muffin cups.
- Top with sprinkles and bake for 12-15 minutes, or until a toothpick inserted into a muffin comes out clean.
- Remove from the oven and cool in the pan for 10 minutes. Then move to a wire rack to cool completely. Store in the refrigerator in an airtight container lined with a paper towel for 3-4 days. Or, freeze in a freezer-safe bag for up to 3 months!

TOTAL TIME: 30 Minutes
YIELD: Approximately 30 Mini Muffins
