Gluten-Free Crackers with Loaded Baked Feta
Ingredients:
Ingredients for crackers:
- 1 cup Extra Fine Almond Flour
- 2 tbsps Ground Flax Seeds
- 2 tbsps Hulled Hemp Seeds
- 1/2 tsp Sea Salt
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Dried Oregano
- 1/2 tsp Rubbed Thyme
- 1/2 tsp Parsley Flakes
- 2 tbsps Extra Virgin Olive Oil
- 2 tbsps Water
Ingredients for baked feta:
- 1 block Feta Cheese
- 1 cup Natural Turkish Figs (chopped)
- 1/2 cup Hulled Raw Pistachios (chopped)
- 1/2 cup Walnut Halves (chopped)
- 2 tbsps Extra Virgin Olive Oil
- 2 tbsps Orange Zest
- 1 tbsp Raw Honey
- 2-3 sprigs Fresh Thyme
Directions:
Instructions for crackers:
- Preheat the oven to 325°F.
- In a food processor, add all of the ingredients. Process until combined and a dough forms.
- Form the dough into a ball and place it on top of a piece of parchment paper. Add another piece of parchment paper on top then press down to start flattening. Use a rolling pin to roll out the dough to about ¼ inch thickness. Carefully remove the top layer of parchment paper then slide the piece of parchment paper with the rolled out dough onto a baking sheet.
- Shape the edges if needed to smooth them out. Use a sharp knife or pizza cutter to cut into desired size crackers. Place in the oven for five minutes. Rotate the baking sheet and bake for another five minutes. Turn the heat up to 350°F and bake for another five minutes or until golden brown on top.
- Let the crackers cool for about 10 minutes before carefully separating them.
Instructions for baked feta:
- Preheat the oven to 350°F.
- In a baking dish, add the feta cheese. Add the chopped figs, pistachios and walnut pieces on top of the feta and around it.
- Drizzle the olive oil all over. Add the orange zest then drizzle the honey all over. Top with fresh thyme.
- Bake for 30 to 35 minutes or until browned and the feta has melted.
- Remove the sprigs of thyme then mix the melted feta cheese in with the rest of the dish. Serve with the crackers. Enjoy!
Notes:
The cracker recipe makes approximately 12-24 crackers depending on the size you prefer.
