    Homemade Pasta


    Ingredients:

    • 2 cups (240g) all-purpose flour (plus extra for dusting)
    • 3 large eggs
    • 1 tbsp olive oil
    • 1/2 tsp salt


    Directions:

    1. Prepare the Dough:

    • On a clean surface or in a large bowl, sift the flour, shape it into a mound, and create a well in the center. Crack the eggs into the well, then add the olive oil and salt. Using a fork, slowly whisk the eggs, gradually pulling in flour from the edges until the mixture starts to come together.

     

    2. Knead the Dough:

    • Once the dough begins to form, use your hands to knead it. Continue kneading for about 8-10 minutes until the dough is smooth and elastic. If the dough is too sticky, add a little more flour. If it's too dry, add a drop of water or olive oil. Wrap the dough in plastic wrap and let it rest for 30 minutes.

     

    3. Roll It Out:

    • Divide the dough into 4 portions. Dust your work surface and rolling pin (or pasta machine) with flour. Roll each portion into thin sheets, about 1/8 inch thick, rotating and flipping the dough to ensure even rolling.

     

    4. Cut the Pasta:

    • Using a knife, pizza cutter, or pasta machine, cut the sheets into your desired pasta shape: fettuccine, tagliatelle, or even fun shapes like farfalle! Lay the cut pasta on a floured surface or hang it over a pasta rack to prevent sticking.

     

    5. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook the pasta for 2-3 minutes (fresh pasta cooks much faster than dried pasta). Drain and serve immediately with your favorite sauces, olive oils, or seasonings.
