    Marinated Feta Bean Salad


    Ingredients:

    • 1/2 a 16 oz container of feta
    • 1/4 cup of green olives
    • 1/2 a bunch of cilantro
    • 1/4 of a red onion
    • 1/2 container of cherry tomatoes (container size around 255g)
    • 1/2 a red bell pepper
    • 15oz of red kidney beans - soak overnight
    • 15oz of chickpeas - soak overnight
    • 4 tablespoons of olive oil
    • 1/8 cup red wine vinegar
    • the juice of 1 lemon
    • 1/4 tsp Dijon mustard
    • big pinch of sea salt
    • Pinch of pepper
    • 1/2 tsp of All You Need Seasoning
    • 1 tsp of chili flakes
    • 2 cloves of garlic


    Directions:

    The night before:

    • Soak your beans overnight. Also, the night before, marinate your feta with two tablespoons of olive oil, salt, 1/2 a teaspoon of chili flakes, pinch of pepper and 1/2 teaspoon of our All You Need Seasoning blend as well as 1/4 cup of green olives, chopped.

     

    Day of:

    1. Cook your beans on the stove for 30 minutes to 1 hour, adjusting the time based on your desired tenderness. Keep tasting as they cook to achieve the perfect texture!
    2. Core and dice the bell pepper. Slice the cherry tomatoes in half. Mince the cilantro.
    3. Add the bell pepper, tomatoes, cilantro, and cooled beans to a large bowl.
    4. In a separate container, mix two tablespoons of olive oil, 1/8 cup of vinegar, juice of 1 lemon, 1/4 tsp mustard, sea salt, chili flakes, and crushed garlic.
    5. Toss everything together and store in airtight containers in the fridge for an easy week of meal prepping!
