bring 1 cup (250ml) of water and a pinch of salt (if desired) to a boil in a covered saucepan. slowly stir in 1/4 cup (approximately 40 g) of steel cut oats. when oatmeal begins to thicken (approximately 5 minutes), reduce heat and simmer for about 30 minutes (or to desired consistency), stirring occasionally. serve with milk, cream or a pat of butter. if desired, add honey, maple syrup, brown sugar or molasses to sweeten. for an added treat add dried fruit, raisins, nuts or a pinch of cinnamon. yields one 1 1/4 cup serving.

steel cut oats are obtained from whole oats that have been dehulled and dried. the whole groat is then cut to a specific granulation. stove top steel cut oats are best prepared using the stovetop recipe. microwaving is not recommended.
